This month I have been healing up from shoulder surgery but I’m trying to get back in the kitchen as soon as possible, I have lots on great casserole recipes to share so bear with me while I get back up to speed. I’m anxious to share these recipes with you. Here is a Chicken Lasagna in a white sauce that is utterly delicious. Serve it up with some herb garlic bread and you will not be disappointed. What You Need For Chicken Lasagna:
2 tbsp butter
1 cup diced red onion
3 garlic cloves – minced
1 cup chicken broth
3 cups heavy cream
1 cup chopped cauliflower
1 cup chopped broccoli
1/2 cup chopped carrots
3 tbsp corn starch
¼ cup cold water
1 tsp salt
1 tsp pepper
¼ tsp basil paste
¼ tsp chopped basil
2 cups cooked chicken
9 lasagna noodles – cooked
1 cup cottage cheese
1 cup raw baby spinach – without stems
3 cups mozzarella cheese
How To Make Chicken Lasagna:
Preheat oven to 350 degrees. In a sauté pan melt butter over medium heat and add onions and garlic; cook 4 to 5 minutes stirring occasionally. Add chicken broth and continue cooking until the sauce is reduced by half (approximately 5 minutes). Add heavy cream, red onions, cauliflower, broccoli and carrots and bring to a boil. In a small bowl mix the corn starch with the cold water until completely blended and stir into the cream sauce after it has begun to boil.
Add cream sauce mixture with chicken, salt, pepper, basil paste, chopped basil and cook till thick then remove from heat. In a 9” x 11” greased casserole dish put down a layer of 3 noodles in bottom of dish, top with 1/3 of the cream sauce mixture, lay the 1 cup of cottage cheese evenly over cream sauce, lay baby spinach over top of cottage cheese. Layer another 3 lasagna noodles down and top with 1/3 cream sauce plus 2 cups mozzarella cheese then top with last 3 lasagna noodles top with rest of cream sauce and the other cup of mozzarella cheese. Bake uncovered at 350 degrees for 35 – 40 minutes.
